Hardly there will be someone who doesn’t know about carrot. Its slight sweetly and crunchy texture is favorite among us.  It is packed, orange color root vegetable which grows underground. It is also found in some other colors like yellow, white, red and purple.

Benefits of carrot:

  • The most valuable thing about carrot is its ability to provide vitamin A. Carrot contains the highest source of Vitamin-A in the form of Beta carotene. It is an excellent vegetable for eyes and helpful in night vision problems. It is also useful in fighting against development of senile cataracts.
  • Beta carotene is also an antioxidant which helps in fighting with free radicals in the body which promote cell degeneration.
  • Carrot juice has anti-carcinogenic properties, which help in fighting against cancer.
  • Carrots are a rich source of carotenoid which are hugely valuable in reducing the risk of heart diseases. Carotenoids also found useful in regulating the blood sugar.
  • Carrot juice is also plentiful source of Vitamin C, which helps in quick healing of wounds and maintains healthy teeth and gums. Vitamin C also increases immunity system of the body.

How to Eat carrots:

Most vegetables lose their nutritional value, when cooked but carrots are different. Slight cooking of carrot makes the carrot fibers ease which hold beta carotene. In this way, steamed or minor boiled carrots make beta carotene easily accessible for body.
Drinking carrot juice is more valuable than carrot raw because beta carotene gets separated from fibers in juice and ready for the body to absorb.

How to store carrot:

Carrots are hard root vegetable which can be stored for a longer time without losing its freshness. To keep the carrot freshness, you should keep it in the coolest part of the refrigerator. Before storing in a refrigerator, you should cut its green top as they extract moisture from the root and make the carrot wilt. Try to avoid keeping carrot near potato, apples or other vegetables, which generate ethylene and make carrot bitter.


So carrot is highly essential for healthy eye sight as well as strong immunity system. You should include carrots in your daily diet to keep your body stay healthy.

Mmm - I'm glad that cooking carrots doesn't strip them of their vitamins, because I absolutely LOVE steamed carrots! I'll eat them raw too, don't get me wrong, but steamed veggies with a little light sauce? Heaven.
